Ingredients

  • 1 lb. ground chicken
  • 1 egg
  • 3 tbsp quick oats
  • 1 onion, finely chopped
  • 1 tsp dried garlic
  • 1 tsp dried oregano
  • 1 lemon, zested
  • 2 tsp ground coriander
  • ½ tsp ground cumin
  • ¼ cup parsley, chopped
  • Salt and pepper
  • 1 tsp olive oil

To serve:

  • 1½ cup hummus
  • Cucumber, sliced
  • Carrot, sliced
  • Red onion, sliced
  • Parsley, chopped
  • Lemon

Preparation

  1. In a large bowl, combine the chicken, egg, oats, onion, garlic, oregano, lemon zest, coriander, cumin, parsley, salt and pepper.
  2. Mix with your hands until everything seems evenly combined.
  3. Form the patties in thick oval shapes.
  4. Heat a grill at high temperature and add a bit of olive oil. Grill the koftas - around 10 minutes per side - until fully cooked and browned on the outside.
  5. Serve with hummus, cucumber, carrot, red onion, parsley and lemon.
